some of our friends have a green thumb and a neat garden. and when they let us go pick some of their home grown veggies, i decided to fry the eggplant and zucchini and make a mediterranean style vegetarian dish. my hubby and i agreed: it came out tasting absolutely delicious!
although i don't have an exact recipe to follow, this will give you a good idea:
• sun dried tomatoes
• olive oil
• brown sugar
• lemon juice
• basil (to garnish)
i started off by cutting the eggplant and zucchini in slices, sprinkling them with salt and brushing olive oil on them. then i fried the slices til they were soft.
since i didn't take notes and somewhat experimented with this recipe, i don't have the exact details to follow. it wasn't complicated though, pretty much just frying the garlic, adding the tomatoes, olives, lemon juice, sugar (it will caramelize, yum!)
although we didn't have a side with it, i can imagine that for example rice or pasta would go well with this dish, and you can use some fresh basil to garnish if you like.
