quick and light summer lunch

with so much play, so many outings, so many trips to playgrounds, parks and playdates, and the everyday crazyness of life with a toddler - plus a mama trying to squeeze in these minutes of creative time for herself, i sometimes find it a bit hard to come up with a healthy, but quick and easy lunch for the two of us. especially on hot summer days like today when i feel like being anywhere but infront of the stove.


one of my favourites for many years now has been couscous. it just takes a few minutes to cook and is so versatile. i love it with ground almonds, grated apple, cream and cinnamon.
today i tried a more spicey version: with tomatoes, crème-fraîche, cilantro and a dash of freshly ground pepper. perfect!

I have only prepared couscous savory so I am must try it 'sweet'.
I have been keeping boiled eggs,sliced cheese and cut up fruit in the fridge for quick meals. I have jars of pasta with pistou and red tomato sauce in the fridge along with olives and sweet peppers. A cold quinoa salad is always nice too, or a corn and black bean salad.
I have been taking a few hours each weekend and filling the fridge with these items to have for the week since it's just too hot to cook every day.

I've recently just found a recipe that I love - it's a tuna salad consisting of tuna (of course :-P), cherry tomatoes, cannellini beans, avocado, and a little taste of spanish onion - it's healthy and so yummy!

when it's very hot and humid and we didn't prepare anything in advance we often feel like a nutritious smothie: orange juice as base and then add any fruit we have around, some yogurt, and also milled flax seed for fiber. delicious!

I'm amazed of how you mama's can do it with that creative time in between everything else! I'm not a mama, and I struggle with it anyway!
